  1. Preheat oven to 400 degrees
  2. Place egg, mili, oil, tapioca flour, and salt in a blender and blend until smooth.
  3. Add cheeses and pulse twice.
  4. Spray a mini muffin tin with non-stick spray. Pour batter into the tin, filling each well about 3/4 full. Sprinkle a few grains of kosher salt on each muffin.
  5. Bake for 15-20 minutes until puffed and golden.
  6. Remove from the oven and serve immediately.
