These quick and easy rolls are crisp on the outside and chewy on the inside. They are naturally gluten free and can be made with or without cheese for those with dairy sensitivities. They are good alone or with jam. Their Brazilian name is Pao de Queijo. Enjoy!

- 1 large egg
- 1/2 cup milk may substitute dairy, almond, or coconut
- 1/4 cup` olive oil or coconut oil
- 1 cup tapioca flour/starch no substitutions
- 1/2 tsp kosher salt
- 1/4 cup grated cheese omit for dairy sensitivities
- 1/4 cup grated parmesan cheese omit for dairy sensitivities
Ingredients

- Preheat oven to 400 degrees
- Place egg, mili, oil, tapioca flour, and salt in a blender and blend until smooth.
- Add cheeses and pulse twice.
- Spray a mini muffin tin with non-stick spray. Pour batter into the tin, filling each well about 3/4 full. Sprinkle a few grains of kosher salt on each muffin.
- Bake for 15-20 minutes until puffed and golden.
- Remove from the oven and serve immediately.
